Chewy Carob Pudding

Here is a nice easy snack that I came up with that I find is great for satisfying a sweet tooth without the sugar! It also contains nothing refined, no caffeine, no dairy, gluten, grains or salt. Well what could it have in it without all those things?

The following ingredients are not only easy to find, but also healthy:

  • 2 tsp hemp seeds
  • 3-4 tsp unsweetened shredded coconut
  • 2 tsp wildcrafted carob powder
  • 1 tsp non-gmo xylitol harvested from hardwood trees, not corn
  • 1/4 – 1/3 cup unsweetened coconut milk/almond milk/rice milk… whatever you prefer

Those are the baseline ingredients for a single serving. You could add whatever else you wish to the recipe, like dry fruit, vanilla extract, sea salt, pure cinnamon or other spice too.

I mix the dry ingredients together good first and then poor the milk overtop and stir it thoroughly. I have even melted organic butter and drizzled it in and mixed it before adding the coconut milk.

One other option I tried and found to work nicely was adding whipped coconut cream on top. Gather the thick coconut cream from canned coconut and refrigerate it for a solid 24 hours. Then place the chilled cream in a mixing bowl. With a hand mixer, whip the cream until it peaks, just like heavy dairy cream.

This little snack is packed with fiber, protein and healthy fats. It sure satisfies my type O sweet tooth! 🙂
